Abstract

Deoxynivalenol is a common mycotoxin in grains such as wheat and corn. Contaminated food can seriously affect the health of humans and animals. Hence, to ensure the safety and quality of food at crucial segment, it is essential to manage the risk of Fusarium infection and deoxynivalenol (DON). Nowadays, countries around the world attach great importance to predict the risk of food mycotoxins contamination. The research about the prediction and early warning of DON contamination has been progressed recent years. The results would help to reveal the relationship between contamination risk and agronomical information to develop the prediction model. This paper reviewed the latest research results of the prediction of the DON contamination, aiming to summarize the existing research methods and results, and provide the basis for the early warning of mycotoxin in China.
