Abstract
Achieving a transition from animal to plant protein requires knew proteins for use in food products from sources that are not utilized for food yet. As a protein source we select tomato leaves and stems that are a representative of the many agricultural side streams that are out there. Wageningen Food & Biobased Research offers protein suppliers tailor-made advice for the design and improvement of protein extraction processes. We specialize in mild processing and design of functional fractions for total crop valorization.
