Abstract

The invention relates to oil- comprising protein particles, oil-free particles, and a method for preparation thereof. The invention is also concerned with the use of such protein particles for incresing the protein content of a food product, for replacing fat in a food product, and controlled release of protein in the gastrointestinal tract.
