Abstract
Isoelectric precipitation (IEP) of oat proteins uses alkaline conditions that contribute to off-colour formation, through auto-oxidation of inherent phenolic compounds. This research aimed to develop an alternative protein extraction process with comparable protein content, yield, and composition as isoelectric precipitation, while avoiding alkaline conditions.
