    Abstract

    The present invention relates to a process and a device for preparing pre-fried or deep-fried starch containing products wherein product properties are monitored on-line. These product properties are used to control the process for preparing the pre-fried or deep-fried starch containing food product. The product property that is monitored is in particular moisture content.
