Abstract

Discussed are the pectin esterases. They comprise enzymes that hydrolyze the esters present in the pectin backbone. Currently three classes of esterases have been identified: the pectin methylesterases, the pectin acetylesterases and the rhamnogalacturonan acetylesterases
