Abstract

In this chapter, the working view on quality, quality attributes, quality-related product properties, and consumer acceptance is briefly recapitulated. Based on these viewpoints, when only concerned with the quality assigned by the end-user, modeling quality can be restricted to modeling the appropriate attributes upon which the quality of a particular commodity is based.The modeling of product quality is based on the principles of problem decomposition, that is, the decomposition of a complex process into the constituting simpler processes, and, then, describing these processes in terms of dynamic changes in the form of differential equations. By using the laws of nature and the fundamental rules of scientific disciplines, for example, chemical kinetics, the differential equations are solved into analytical solutions. Some examples relevant to fruit and vegetable supply chains are provided, which indicate the power and usefulness of the technique. Especially in complex situations like global supply chains, using these techniques can be very powerful in understanding the occurrence of biological variance and for combining data from different experiments and regions.
