Abstract

The complex nature of dietary protein and the food matrix makes it unpredictable just how much will be absorbed and used by the body. There are many methods of testing protein content in foods and determining nutritional value, however each has its own trade-offs. In order to have a more sustainable and correct protein transition, protein testing must minimize the use of animal models and be better tailored to human dietary uptake and requirements.
