Abstract

Plant proteins are drawing increasing interest as the global market is expected to increase to 9 5 billion dollars by 2024 (Mordor Intelligence, 2019 In high protein beverages, high ( protein concentrations are difficult to achieve and may bring undesired sensory attributes such as thickness As an alternative to dispersing denatured commercial mung bean proteins CMP or soybean proteins for plant protein beverages, we study a more sustainable extraction method, combining dry fractionation and aqueous phase separation to formulate a low viscosity liquid mung bean protein ingredient LVMP.
