Abstract
The aim of the bread chain analysis is to show the current situation and to identify the challenges and associated solutions. The core question is how the cultivation and processing of Dutch baking wheat in the chain can be made more attractive economically, and what the potential is for Dutch baking wheat. This has been investigated by means of literature research and interviews with experts in the chain. With the right incentive at all links in the chain, baking wheat can gain a larger share in the domestic bread chains. Price is seen as the biggest obstacle, this is directly a reason for the farmer to choose feed wheat, but it is also often an indirect factor.
