Fusarium toxins are an important class of mycotoxins of concern in the modern food chain. The aim of this project is to elucidate the role of the gut microbiota in toxicity and risk assessment of masked Fusarium mycotoxins using deoxynivalenol (DON) and its conjugates as model mycotoxins.
