This project explores the feasibility of using Spectral Imaging and advanced image analysis in combination with Artificial Intelligence (AI) tools to predict sensory perception and oral processing behaviour of food in a non-destructive, fast, and effective manner. Specific objectives are:
1.
Explore the combination of Spectral Imaging and AI to predict texture and taste attributes thereby replacing human panels (feasibility)
2.
Predict the composition of food matrix (i.e., sugar, salt, fat), its oral processing behaviour and its dynamic sensory perception (feasibility)
3.
Build a consortium and a Public-Private Partnership proposal to advance such technologies in collaboration with food industry and technology
The SMP consortium consists of internationally operating partners situated in Europe and in the US. Photon Mission is a Dutch SME providing high tech photonic equipment. DSM-Firmenich is a global player in health and nutrition solutions based in the Netherlands. Tate & Lyle is a multinational US based company that provides ingredient solutions across all food categories. Zeelandia is a Dutch company operating world-wide that provides bakery ingredients to both industrial and small to mid-sized bakery businesses. By bringing together ingredients and food producers, and technology providers, the project will enable the development and implementation of the technology on both the Dutch and international market. This opens opportunities for further international collaboration.
