Identification of novel Maillard Reaction Products (MRPs) in milk processing and their effects on digestion, intestinal microbiome, and intra-intestinal epithelial cell signaling pathways in vitro infant model.

Project: PhD

Project Details

Description

This project aims to comprehensively reveal 1) the structures and types of all novel MRPs in relation to milk protein structure, 2) the digestive efficiency of MRPs and their roles in modulating the infant intestinal microbiome, and 3) the mediating role of MRPs and their metabolites on intestinal epithelial cell signaling pathways in vitro infant model.
