Description
The SaB project propels health and sustainability through innovative processes and food products utilizing whole grains and food industry side streams. By advancing sustainable, minimally processed options, SaB aims to effectively deliver health-promoting nutrientsto citizens through development of innovative, economically viable and environmentally sustainable products and processes.
SaB expects to impact (i) scientific advancement (innovative bioprocesses integrated with non-thermal treatment, in vitro/vivo models predicting health benefits of processed food, Establishing the European Strategy Forum on Research Infrastructures), (ii) societal and environmental benefits (increasing consumer trust and consumption of minimally processed, healthier and sustainable plant based foods, reducing the environmental impact of food
production and minimizing waste by upcycling side streams) (iii) economic growth (boosting the regional plant-based food industry, supporting rural economies by adding value near primary production sites, jobs creation across plant-based food sector).
