The prediction and measurement of allergenic properties of food proteins is a complicated task, because many different types of intestinal/epithelial and immune cells are involved, and also food proteins strongly differ in properties. WUR-FBR participates in collaborations and projects to develop models based on human organoids to:

  1. Develop physiologically relevant models to measure allergenicity

  2. Models that can predict potential allergenicity
