Description
Presentation on shear cell technology. Shear cell technology can be used to create anisotropic, fibrous structures for meat analogues from plant-based ingredients. Often shear cell technology is compared with extrusion technology for making meat analogues; in the first part of the presentation I will show some of the differences and the similarities of the two technologies. Within the Plant Meat Matters project part of the research focused on creating a window of operation for producing those anisotropic, fibrous structures. That part of the research is described in the second part of this presentation.Period | 2021 |
