Summary: Spanish-style green olives are famous fermented vegetables. Due to subotpimal conditions, spoilage may occur. There has been no study suggesting a practical solution for easy and early detection of spoilage. In this study, using SPOTDETECT, we propose that following m/z 45 can lead to easy and fast detection of abnormal fermentation.
